Warning - this one is spicy… very spicy. There’s nothing like
as Mexican chili to put a spring in your step. In this case,
we’ve muddled it with ginger and infused the mix into our
own spicy gomme. A splash of lime juice and fresh
pomegranate, mixed with Jose Cuervo Tradicional make this
one hot tamale. Did we mention the ginger and chili sugar
WILLIAM’S SPICE CABINET
The beautiful pear is complimented by a splash of Amaretto
and a palate bursting set of ingredients. Served in a martini
glass, cinnamon, clove, pimento and fresh ginger are brought
together in this beautiful Ketel One based drink.
LAVENDER IN LONDON
When elderflower and crushed lavender come together a
bouquet of scents are released. Tanqueray gin is combined
with lime juice and a touch of St Germaine; when shaken
with an egg white a beautiful, frothy drink is created.
The unique flavours of Canton Ginger travel East and gets
spiced up along the way. Smashed lime, chili and lemongrass
are added to Havana Club Añejo Blanco and then double
strained for your enjoyment. A chili sugared lime wheel
delivers the final punch.

It’s summer in your mouth. Uniting a bit of lime, plenty of
mandarin juice and Patron Citronge this cocktail will remind
you of days at the beach and Sunday Sessions. Nothing
frozen here - trust us, you’ll love it.

There is nothing more delightful than a delicious crème
brulée, especially when it comes in a glass. Campbells
Rutherglen Tokay and vanilla infused Ketel One are shaken
together with butterscotch and vanilla bean paste. Complete
the effect with a crème float and caramelized sugar lattice.
STRAWBERRIES AND CRÈME
Rich, velvety smooth cream, decadently indulgent – just the
way you’d expect us to make it. Muddled strawberries, White
Mozart, Ketel One vodka and strawberry liqueur are shaken
